Considering banh mi means "bread," it better be good considering that is a make it or break it factor in determining whether or not a sandwich is good — or great. The bread at Nhu Lan's Bakery (2612 W Lawrence Ave., 773-878-9898) is made on site and scored with a knife to give it the trademark split down the middle. To give you an idea of how many sandwiches Nhu Lan's goes through, spinning racks (to promote even cooking) of 450 small loves are placed into the 400 degree oven for 20 minutes at a time.
